Turkey Taco Bites

Sweet mini peppers make these turkey taco bites both tasty and healthy. Great as snacks, for parties, or tapas as small bites, a dash of zero sodium chili sauce makes these bites pop! Heart-healthy, packed with potassium and flavor and they look beautiful on any plate!

Ingredients: (Makes 36 bites)

1lb organic ground turkey

½ white onion (diced)

18 sweet mini peppers

½ cup low sodium chicken broth (or water)

2 cloves garlic (minced)

¼ cup fresh cilantro (chopped)

1 teaspoon chili pepper sauce (Trader Joe’s is the best = 0mg sodium)

¼ cup shredded Mexican cheese blend

1 teaspoon paprika

2 teaspoons garlic powder

1 Tablespoon ground cumin

¼ teaspoon salt

1 Tablespoon extra virgin olive oil


Preparing this recipe:

Rinse the peppers and cut in half lengthwise. Remove the seeds and core, leaving a clean pocket for the filling. Preheat the oven to 350 degrees and line a baking sheet with aluminum foil or parchment paper. Toss the clean pepper halves with ½ tablespoon of olive oil and place open face up on the baking sheet.


In a skillet, add ½ tablespoon of olive oil. Sauté the onion for 2-3 minutes then add the ground turkey to the pan. Add the paprika, garlic powder, minced garlic, cumin, salt and stir in the chicken broth to moisten the turkey and onions browning together for 5-7 minutes on medium heat. Stir in the cilantro to combine then remove from the stovetop.


Spoon the ground turkey mixture into each pepper. Add a dash of chili sauce (just a few drops), and top each pepper with a pinch of cheese.


Bake the peppers for 15 minutes, until the cheese melts over and the peppers start to roast/wilt just slightly. Remove from oven and let cool for 5 minutes. Enjoy!
