When the sweet tooth is calling, there's nothing better than this DASH diet-friendly combination of dark (bittersweet) chocolate and oatmeal. These flourless cookies are packed with antioxidant rich dark chocolate, healthy whole grain oatmeal and most definitely satisfy that sweet tooth that's calling! These are great with coffee too, and I might have had one once for breakfast in a hurry...
This is a quick and simple recipe, foolproof for even novice bakers, and taste as good as they look, guilt-free!
Ingredients (Makes 24 cookies):
2 1/4 cups of Quick Cooking Whole Grain Oats
1 Tablespoon cornstarch
1/8 teaspoon baking powder
1/2 cup unsalted butter
1/3 cup pure cane sugar
1/3 cup dark brown sugar
1 extra large egg
1 teaspoon vanilla extract
1/2 cup bittersweet chocolate chips (60 - 70% cacao)
1/8 tsp. of salt
Preparing this recipe:
Heat oven to 375 degrees. In food processer/blender/Magic Bullet pulse to grind 1 1/2 cups of oats until finely. Add cornstarch, baking powder and salt and stir or pulse to combine. In a large mixing bowl combine butter and sugars until light and creamy. Add egg and vanilla extract and mix until smooth. Add dry oatmeal ingredients to combine. Fold in chocolate chips and remaining cup of oats until evenly distributed in the mixture. Line baking sheets with parchment and spoon dough into cookies 2" apart. Bake about 15 minutes until bottom edges reach a golden brown. Cool on parchment then move to wire racks to until cooled completely. Enjoy!
