Oatmeal Almond Bites

Oatmeal Almond Bites

Ingredients: (Makes 32 bites)

1 cup steel cut oats

1 cup Cassava flour

16oz almond butter (creamy, no salt added)

1 cup almond milk (vanilla - unsweetened)

1/4 cup brown sugar

1 teaspoon baking soda

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup of chopped walnuts (optional)

1/4 cup of raisins (or any dried fruit)


Preparing this recipe:

Preheat oven to 350. In a small bowl combine oats, flour, baking soda, cinnamon and salt and set aside. In a mixing bowl, combine almond butter and brown sugar until smooth. To the almond butter mixture add almond milk, vanilla extract and slowly stir in the dry ingredients and mix thoroughly until smooth. Stir in raisins and walnuts evenly.


On a baking sheet, hand roll or spoon into 32 small balls and place onto baking sheets. Cook for 10-12 minutes. Remove from the oven and use a fork to gently press down to flatten each ball into a thick cookie. Return to the oven for 2-3 minutes until the edges are golden brown.


Cool on a wire rack and enjoy!

Store at room temperature in an air tight container for up to 2 weeks.
